South Korea’s culinary heritage boasts exciting flavors, a mouth-watering range of comfort foods and fine dining as well as immunity-boosting health benefits 

Fermentation, admired for its probiotic nutrients, was used in Korean recipes over two thousand years ago. This lies at the heart of the culinary tradition, used to make kimchi (fermented vegetables) and sauces like gochujang (spicy-sweet chilli paste), that embellish loved classics like Galbi (beef BBQ).
As distinctive is the structure of a Korean meal with the main dish, usually a protein, such as a grilled fish or chicken stew, accompanied by banchan or an array of vegetable side-plates that are not individually ordered but provided by the restaurant. This is best appreciated in an elaborate hanjungsik or traditional multi-course meal.

That is not to say that Korean cuisine is bounded by tradition. Korean Fried Chicken grew from the influence of the American military stationed there after the war. These days, Korean fusion restaurants in Seoul are as progressive as any to be found in Tokyo, Barcelona or New York.

Day 01

Arrive in Seoul

Those with the inclination to acclimatize on their day of arrival might take a stroll through Insadong enjoying the cultural goods on display and sauntering through the traditional alleyways that head north towards Bukchon. For an easy first meal lying on the midpoint between East and West, why not try crispy Korean Fried Chicken. Those who wish to immediately dive into the culture might instead head to the hotel bar and amidst their cockails, ask for anju, a whole set of Korean foods that are designed to accompany alcoholic beverages.
Day 02

Cooking lesson, Market Visit, Tea Introduction And a BBQ DInner

We begin the first day of our culinary itinerary with a market tour and a cooking lesson, building a bibimbap (rice dish comprised of sauteed vegetables, fermented chilli sauce and meat often topped with a raw or fried egg). Originally imported from China, Korea has separately developed its own tea culture and industry with a close eye on tea's nutritional benefits, information that will be imparted by our tea master. In the early afternoon, we visit Gyeongbok Palace, the grandest of Seoul's five royal palaces, paying particular attention to the kitchens, of course. You will celebrate the end of your first day in South Korea with a typical Kalbi BBQ (marinated, caramelized beef) dinner.
Day 03

Royal Cuisine Lunch and Street Food for dinner!

Bukchon is an area between Seoul's two principle palaces that was once reserved only for nobility. You will learn the history and distinctive features of the beautiful traditional wooden courtyard homes here. For lunch you will be introduce to royal cuisine. Developed mostly during the neo-Confucian Joseon dynasty (1392 - 1910), this is a self-contained food style in the traditional canon. Its highly refined dishes are imbued with deep symbolism echoing a wide range of traditional thought. After lunch, we visit the National Museum. Its ceramics collection displays not only earthenware fermentation jars used from the dawn of Korean civilization, but also the exquisite celadon porcelain designs, developed towards the end of the first millennium that continue to underpin the Korean dining experience. Our dinner this evening is very relaxed. Under the tutelage of our food expert, we head to Gwangjang market to sample some delicious street food. Here you will learn that not all rice cakes are created equally!
